Spiced Ghee Rice with Golden Onions

Spiced Ghee Rice with Golden Onions

A fragrant South Indian style ghee rice with long-grain basmati, golden ghee, and whole Ceylon cinnamon and cloves. The spices are bloomed in hot ghee to infuse the rice, so it smells rich without being heavy. Serve it with a curry for a weekday meal, at a festive lunch, or with a simple dal and raita.

Why cinnamon & cloves?

Ceylon cinnamon is prized for its delicate sweetness, gentle warmth and smooth, woody notes. Ceylon cloves bring a fresh aroma and natural sweetness with low bitterness. Together they infuse the ghee with a layered fragrance that brings out the nutty richness of the rice without overpowering it.
