Ingredients

  • 2 cups milk (dairy or plant-based
  • 1 × Australian Certified Organic Ceylon Cinnamon Stick
  • 1 tsp vanilla extract (optional)
  • 2 cups rolled oats
  • 2 large apples, peeled, cored & diced
  • ¼ cup sliced almonds (plus a sprinkle more for topping)
  • 3 tbsp honey or maple syrup
  • ½ tsp Australian Certified Organic Ceylon Cinnamon Powder
  • Pinch of sea salt
  • 1 egg (or flax egg for vegan)
  • 2 tbsp coconut oil, melted

Steps

  • In a small saucepan, pour in the milk and add the Ceylon Cinnamon Stick.
  • Warm gently over low heat for about 8–10 minutes , don’t boil. The goal is to allow the natural cinnamon aroma and essential oils to infuse into the milk.
  • Remove from heat, let it cool slightly, then discard the cinnamon stick.
  • Preheat the oven to 180°C / 350°F.
  • In a large bowl, combine oats, diced apples, sliced almonds, Ceylon Cinnamon Powder, and a pinch of sea salt.
  • In a separate bowl whisk together the infused cinnamon milk, honey (or maple), egg (or flax egg), vanilla (if using), and melted coconut oil.
  • Pour the wet mixture into the dry ingredients and stir until evenly coated.
  • Transfer to a greased baking dish (about 8×8 inches).
  • Smooth the top and sprinkle a little extra Ceylon Cinnamon Powder and almonds.
  • Bake for 30–35 minutes, until golden and set.
