Ingredients List

  • 8 bread slices, brown crust removed
  • 3 eggs
  • ½ cup finely chopped onion
  • 2 green chilies - finely chopped
  • ¼ cup finely chopped purple cabbage
  • ½ cup finely chopped red and yellow capsicum
  • ¼ cup chopped broccoli florets
  • Salt to taste
  • Pepper powder
  • 1-2 tbsp moringa paruppu podi
  • ¼ cup finely chopped coriander leaves
  • 2 tbsp grated parmesan cheese
  • Butter

Instructions

  1. Remove the brown crust of bread slices. Toast the slices with butter and keep aside.
  2. Take a wide mixing bowl and add eggs. Whisk it well. Add salt and pepper powder.
  3. Add onion, chilies, vegetables and coriander leaves one by one. Whisk again.
  4. Add moringa paruppu podi and parmesan cheese. Whisk everything together.
  5. Heat butter in a frying pan. Pour omelette batter and cook covered for a few minutes. Flip the omelette carefully and cook again.
  6. You can cut the omelette into square shape and place it between two toasted bread slices. Serve warm and enjoy.
