- 8 bread slices, brown crust removed
- 3 eggs
- ½ cup finely chopped onion
- 2 green chilies - finely chopped
- ¼ cup finely chopped purple cabbage
- ½ cup finely chopped red and yellow capsicum
- ¼ cup chopped broccoli florets
- Salt to taste
- Pepper powder
- 1-2 tbsp moringa paruppu podi
- ¼ cup finely chopped coriander leaves
- 2 tbsp grated parmesan cheese
- Butter
- Remove the brown crust of bread slices. Toast the slices with butter and keep aside.
- Take a wide mixing bowl and add eggs. Whisk it well. Add salt and pepper powder.
- Add onion, chilies, vegetables and coriander leaves one by one. Whisk again.
- Add moringa paruppu podi and parmesan cheese. Whisk everything together.
- Heat butter in a frying pan. Pour omelette batter and cook covered for a few minutes. Flip the omelette carefully and cook again.
- You can cut the omelette into square shape and place it between two toasted bread slices. Serve warm and enjoy.
